kale and quinoa pilaf

makes 3-4 servings

  • 2 cups water
  • 1 cup quinoa
  • 1 bunch kale, chopped
  • 1/2 lemon, zested and juiced
  • 2 scallions, chopped
  • 1 cup mushrooms, chopped
  • 1 tablespoon walnut oil
  • 3 tablespoons pine nuts, toasted
  • 1/2 cup goat cheese
  • salt and pepper to taste

bring water to a boil. add quinoa, cover, and simmer for 10 minutes. add kale to pot and steam for 5 minutes. in a separate pot, combine lemon juice, scallions, mushrooms, oil, and pine nuts. cook for 5-10 minutes, until mushrooms are done. add in goat cheese and salt and pepper. add quinoa mixture to vegetables. mix well and serve.
